Yummy Paleo granola….
When you feel like something that resembles cereal, but don’t want the gluten of oats and wheat (and the sugar), try this amazing, tasty, healthy, full of goodness Paleo granola. So good.
Serve with greek or coconut yogurt, or on top of a smoothie bowl.
Can be used as a breakfast go to, or an afternoon snack. Use no more than ½ cup for a serving.
It full of good fats and protein, and extremely low in carbohydrates.
1 cup mixed nuts
½ cup sliced almonds
½-1 cup shredded coconut
½ cup pumpkin seeds
½ cup sunflower seeds
½ cup linseed
4 tbsp coconut oil
1 tspn cinnamon
½ cup dried banana or ¼ cup dried cranberries
- Heat the oil in an oven tray/dish.
- Chop the nuts roughly and then add all ingredients to the tray with the melted oil.
- Stir, then bake in a hot oven (200C) for around 15-20 minutes until golden. Stir every 5 minutes.
